Aloo Palak (potatoes and spinach)

Now I know it doesnt sound like much but it actually tastes pretty great. Its pretty simple to make too.
you will need;
     1 onion (chopped finely)
     4 cloves of garlic(crushed)
     1 chilli(chopped)
     butter (about 25g but as much or as little as you like)
     teaspoon of salt and a little black pepper
     half a teaspoon of paprika, curry powder, chilli powder and ginger powder and tumeric
    bunch of spinach(chopped)
    and some potatoes
Everything is up to you, you can add more or less of any of the ingredients until it's right for you, thats what I do everytime I make it , I never really have a set recipe for stuff like this.
First thing to do is:
1.heat some onions and chilli and butter until it has melted , let it cook a little until the onions often
2. add the spice mix , thats all teh 'half teaspoon' ingredients and mix well
3. add the garlic and about half a glass or so of water and let it cook for about 3 minutes
4. begin adding the spinach part by part, it will welt down quickly so dont worry about it not fitting in
5. turn the heat to medium and cover , keep checking on it every 5 mins and give a stir too
6. at this point you can peel and chop the potatoes into small chunks so they will cook quickly, you can place them in some water so they dont go brown
7. when most of the water from the spinach has evaporated you can drain and add the potatoes and keep um cooking until they have become soft
8. turn up the heat one lats time so the buttur will rise to the top, it should be a reddish colour and then thats it! Finished!
You can enjoy this with some plain boile drice or some nan or chappaties or whatever floats your boat!

The Pakistani food that I am used to is really just Indian food but with a twist from my own small region in north Pakistan and that of my family and what has been passed through the many generations. India is a large country and has many different styles of food depending on which region you go to. I will try and be varied and include some of the more national dishes that I am more familiar with. My recipe style is, I have to warn you, not very typical, but you should be able to follow it and hopefully it will make your experience of cooking Pakistani food much happier and easier!
